Tiếp theo bạn nêm nước tương, muối, đường, hạt nêm, rượu trắng rồi đảo đều xào cho nguyên liệu ngấm đều gia vị.
Cuối cùng bạn trút tất cả nguyên liệu sang nồi đất và thêm nước cho xăm xắp mặt thịt, đậy nắp và kho lửa nhỏ liu riu cho tới khi thịt mềm, chuyển màu nâu đậm, thịt ngấm đều gia vị và rút cạn bớt nước là tắt bếp. Múc thịt kho dưa muối mặn ra tô để thưởng thức với cơm nóng thì ngon miễn chê.
