Rau má bỏ gốc, rửa sạch và để cho ráo nước. Lườn ngan hoặc đùi ngan rửa sạch, để ráo, lọc lấy thịt và thái lát mỏng. Hành khô, gừng băm nhỏ (1 nửa để ướp ngan, 1 nửa dùng để xào).
Ướp thịt ngan với hành, gừng băm nhỏ, cùng với 1 thìa cà phê hạt nêm, 2 thìa cà phê nước mắm, 1/2 thìa cà phê tiêu xay trong khoảng 30 phút cho ngấm gia vị.
Bắc chảo lên bếp, đợi chảo nóng thì cho dầu ăn, khi dầu nóng thì thả gừng và hành vào phi thơm. Hành và gừng lúc này hơi xém thì trút toàn bộ thịt gan vào xào nhanh tay với mức lửa vừa. Xào cho ngan săn lại và bỏ ra bát riêng.
Vẫn sử dụng chảo đó, thêm xíu dầu ăn, thả hành vào phi thơm thì đổ rau má vào xào, khi rau chín tái thì cho ngan vào đảo qua khoảng 1 phút. Lúc này bạn nêm lại gia vị cho vừa miệng là có thể tắt bếp được rồi!
Ngan xào rau má nóng hổi, bạn nên ăn lúc vừa mới xào xong là ngon nhất. Thịt ngan ngấm gia vị, ăn cùng rau má có độ xốp giòn nhất định, giúp món ăn dễ chịu và không bị ngấy.
